The colour reminds me of the Indian coastal Sol Kadi dish. The ingredients put together make it very refreshing. Cool off this summer and beat the heat with this colourful energizing dish.
Add the following in a bowl and whisk thoroughly:
1 beetroot boiled and diced
1 small onion, diced
1 green chilli slit and deseeded
1 inch ginger chopped finely
5 sprigs of mint leaves chopped finely
1 cup of thick plain yoghurt/ curd/ dahi
1/4 th cup water
1 tsp cumin powder
1/2 tsp pink salt
Season it with the following "Tadka":
Heat oil in a small seasoning pan.
Add 1/2 tsp mustard. Let it splutter.
Add 1/2 tsp urad dal
Add a pinch of hing
And few curry leaves, chopped
Pour this onto the beetroot- curd mixture and give it a good stir. You may garnish with coriander. Keep in the refrigerator and serve cold with hot rice and veggies.
