I cannot stop raving about this dish. #Okra, Lady's finger, #Gumbo or #Bhindi(as we call it in India) is a rich source of potassium, Vitamin C, has fiber and rich in Vitamin K. When coupled with potatoes, it's a match made in vegetable heaven. So are you ready to prepare this delicious dish?
Bhindi Batata Sabzi
Ingredients:
250 gms bhindi, washed, towel dried and cut into pieces
1 tbsp sesame Oil or coconut oil
1tsp Cumin
1 smal onion chopped
1-2 green chillies slit
3-4 garlic pods chopped
1/2 inch ginger chopped
1/2 tsp garam masala
1/2 tsp turmeric
1 large potato chopped
1 Tomato chopped
1tsp Aamchur powder OR Juice of 1 lime
1/2 tsp sugar
3-4 sprigs of coriander leaves
Salt to taste
- Take a big pan.
- Heat oil and add the chopped Okra to it.
- Sauté for 5-8 minutes till it turns a bit brown. Keep aside.
- In the same pan, add 1 tbsp of oil add Cumin and let it splutter.
- Add the chopped onion and sauté till golden brown
- Now throw in the chillies, ginger and garlic. make sure all three cook well
- Once done add the chopped potato
- Add the turmeric, Garam masala and salt to taste.
- Splash a bit of water and cover it and cook.
- Keep checking to ensure the potatoes do not burn.
- Once the potato mixture is cooked add in the browned Okra, garam masala and tomato.
- Cook for two to three minutes.
- Add coriander, a pinch of sugar, Aamchur powder or Lime juice and mix well.
Serve hot with rice or rotis.
