Join me in preparing this soulful dish, Moong Dal Khichdi. It's a staple, comfort food in almost every Indian household. There are umpteen variations and each one is delicious in its own right. The combination of lentils, rice and preferred vegetables makes it very nutritious. Khichdi is one of the foods that mothers introduce their babies to and it's very beneficial in their formative years. Young, old, even the toothless, this is one food that goes down very well with everyone.
Ingredients:
1 cup Rice
1/2 cup split Moong Dal
1 tbsp salt
1 tsp Turmeric Powder
3 1/2 cups of Water
Wash and soak the rice and moong dal for 20 minutes. Now cook the following in a pressure cooker. Approximately 1 whistle on high flame and 2 whistles on low flame. Keep aside.
In a frying pan, sauté the following:
- 2 tbsp Oil
- 1 tsp Asafoetida
- 1/2 tsp Cumin seeds
- 1 tsp Garlic chopped
- 1 small Onion chopped
- 2 small Tomatoes chopped
- 2 Green chillies slit
- 2 Red chillies
- 1 tsp Coriander Powder
- 1 tsp Cumin powder
- 1 tsp Garam Masala
- A few sprigs of Coriander finely cut to garnish
Let the steam out of the pressure cooker by carefully removing the whistle.
Check if it's super soft, if not, cook until another whistle sounds off.
If cooked, Add the sautéed onion tomato mixture to this and give it a good stir and heat on medium flame and garnish with coriander leaves.
Serve piping hot with pickle and some salad. Yummm is the word. Enjoy!
